Crispy Fried Catfish

6 skinned catfish or other fish 
1/2 cup evaporated milk 
1 tablespoon salt 
dash pepper 
1 cup flour 
1/2 cup yellow cornmeal 
2 teaspoons paprika 
12 slices bacon 

Clean, wash and dry fish. Combine milk, salt and pepper. Combine flour, cornmeal and paprika. Dip fish in milk mixture and roll in flour mixture. Fry bacon in a heavy pan until crisp. Remove bacon, reserving fat for frying fish. Drain bacon on absorbent paper.
Fry fish in hot fat for 4 minutes. Turn carefully and fry for 4 to 6 minutes longer or until fish is brown and flakes easily when tested with a fork. Drain on absorbent paper. Serve with bacon. Serves 6.

Lemony Baked Catfish



1/4 cup lemon juice 
1 tablespoon oil 
3 tablespoons applesauce -- unsweetened 
1 egg white -- lightly beaten 
1 pound catfish fillets (or other firm, mild fish) 
1 cup seasoned bread crumbs -- dry, fine

Mix first four ingredients together well and add fish fillets. Marinate in the refrigerator for an hour. Take catfish fillets out and dip in bread crumbs (pre-seasoned or add your own), then refrigerate for another 30 minutes. Bake in a preheated 400° oven for about 20 minutes or until fish flakes with a fork.

Pan Fried Baby Trout
1/4 cup virgin olive oil
2-3 large cloves of garlic
2 lbs of tomatoes peeled and crushed
salt
pepper
1/4 cup parsley chopped
6- 6 ounce trout, cleaned 
Heat oil in a frying pan until hot but not smoking. Add garlic and turn the heat down. When garlic is lightly brown add tomatoes, salt, pepper and parsley. Stir everything well and simmer the sauce for 15 min until it becomes a little dense. Place trout into the sauce so that it is covered with the sauce. If there is not enough sauce spoon over trout and try to cover it. Cook the trout for 5 to 8 min the flesh should flake when you test it. Serve with sauce on it.
