Fried Rattlesnake

Yield: 1 Serving

Ingredients

1 lg Rattlesnake
1 qt Water
4 tb Salt
1 c Flour
1/8 ts Paprika; or to taste
Freshly-ground black pepper;
- to taste
1 pn Tarragon; or to taste
1 pn Thyme; or to taste
Oil; for frying

Instructions

Soak rattlesnake carcass for 2 hours in salted water. Rinse and dry meat
well. Cut meat into chunks to fry. Coat each piece with mixture of flour,
paprika, pepper, tarragon and thyme. Fry chunks of prepared rattler in
oil until golden-brown.
