Maine Lobster Cakes

Yield: 5 servings

Ingredients:

6 slices white bread
3/4 cup butter, melted
3 eggs, separated
3 cups cooked lobster in small chunks
1 Tbsp. finely grated onion, pulp and juice
1 tsp. Worcestershire sauce
1/4 tsp. dry mustard
Lemon wedges

Preparation:

Tear bread into small pieces, place in a medium bowl and pour 1/2 cup of the butter over the bread. Toss to coat. Let stand about 20 minutes or until butter is absorbed.

Once the butter has been absorbed into the bread, add egg yolks, lobster, onion, Worcestershire sauce and mustard; mix well.

In a small bowl, beat the egg whites until stiff; fold into lobster mixture.

Shape into 10 patties.

In a large skillet, melt remaining 1/4 cup butter. Add patties and cook gently until golden brown on both sides.

Serve with lemon wedges.
