Seafood Cakes
Yield: 8 Servings
Ingredients
1 cn tuna in water; drained (12

-- oz.)
1/2 c Miracle Whip or Miracle Whip
- Light
-- dressing
1/4 c Dijon mustard
1/4 c chopped celery
1/4 c chopped green onions
1/4 c chopped green peppers
1 jar chopped pimiento;
-drained (2 oz.)
1/2 ts salt
1/2 ts black pepper
1 1/4 c dry bread crumbs; divided
Oil
Instructions
Mix tuna, mustard, vegetables, pimiento, seasoning and 1/2 cup of the bread
crumbs.
Shape mixture into 15 (2") balls.
Roll in remaining 3/4 cup bread crumbs, coating well.
Flatten balls into small patties.
Refrigerate 30 minutes.
Heat 1/2 cup oil in large skillet over medium-high heat.
Add tuna patties. Cook 5 minutes on each side or until golden brown,
adding additional oil as needed.
Remove from skillet; drain on paper towels.
