Steamed Clams

1 lb. littleneck clams, cleaned
1/4 cup dry white wine
1 tsp. garlic, minced

Method:

In a large saute pan, heat 1 tbsp. vegetable oil until shimmering. Add the clams and garlic. Saute for 1 minute.

Add the wine, cover and steam until the clams open up.

Drain the clams, reserving 1/2 cup cooking liquid.
